Composition

Method
Boil the cream, butter and sugar. Add the lime juice. Cover with kitchen film and leave to infuse for 10 minutes. Melt the white chocolate broken up into pieces (picture 1), add and mix thoroughly (picture 2).
Leave in the fridge for 12 hours and then use a sac-à-poche with a smooth no. 8 nozzle to pipe the mix out into little balls (picture 3). Roll the balls in the icing sugar together with the grated lime rind (picture 4).
Leave to solidify in the fridge before eating.
