Rochées

Delicious little chocolate balls with a tasty mix of pistachios, almonds, cereals and candied fruit on the inside

Composition

  • Chocolate (any of the 3 flavours)
  • Dried fruit and nuts
  • Pistachio meal

Method

Divide all the ingredients into 3 equal parts.
Melt the chocolate you prefer at a max. temperature of 32°, add the melted butter and mix.
Add the finely chopped almonds, cereals and candied orange (picture 1).

Mix carefully (picture 2) and spoon the mix into little heaps on a sheet of baking paper (pictures 3 and 4).

Decorate with pistachio meal, or any other nuts you like.
Leave to harden before serving.

Tips


  • Rochées

    The mix for the rochées must remain soft so it can be divided up into little heaps easily, so the container with the mix must be kept warm. The best way to do this is to wrap the container in a dishtowel soaked in boiling water, replacing it when it cools down.

    Another way is to place the container with the mix in a bowl of hot water, taking care to replace the water when it cools down.
